Menu Plan Monday

We are beginning our "eating from the pantry" again this week, and I am not planning a grocery store run for at least 3 weeks...I am going to try it anyway :) I can't imagine what I would need! We have stocked up on dry pasta, peanut butter, veggies, and potatoes, and we have our beef in the freezer and soon to be chickens as well. The hens are laying (finally!), so the only thing we might need is milk, but I am going to make the 2 gallons we have streeeeeetch as far as I can.

So, with that in mind, here is the menu plan for this week:

BREAKFASTS

  • pancakes, fresh juice
  • oatmeal w/dried apples
  • egg and cheese sandwiches
  • whole grain coffee cake
  • cinnamon rolls
  • cold cereal (2x)

    LUNCHES
  • mac and cheese, peas, apple slices
  • homemade pizza
  • grilled cheese, green beans, pears
  • quesidillas, carrots, apple slices
  • sandwiches at school
  • sliders, chips and salsa
  • shepherd's pie

    DINNERS
  • fettuccine alfredo, broccoli
  • roast beef, peas, mashed potatoes
  • chili over brown rice, cornbread
  • taco pie
  • homemade pizza, popcorn
  • lentil casserole
  • leftover smorgasboard

    Canning Apples and Pears

    Just in case you have been wondering where I have been lately, I have been in my kitchen, saucing apples like no one's business...

    I started out with 6 bushels:



    And I made lots of applesauce and apple butter so far:

    And if that wasn't enough, I went to an Amish bulk store yesterday, and found pears for $16/bushel, which is a pretty decent price here.  I tried peeling and canning pear halves, but since they were so little, I gave up after 3 quarts, and made pear sauce instead:




    And, of course, since I made apple butter, I had to try PEAR butter...




    My hubby and kids love applesauce, and 6 bushels just won't be enough, so next week, I will be making a run to the orchard again and getting them for $12/bushel.  Hubby thought that 15 total bushels would be about right for the winter.  And of course, the weather decided to turn hot and sticky, so my kitchen is about 3,685,432 degrees and you can see the haze in there, but somewhere along the line, it'll be worth it...

    At least I hope so.
